Lemon Chicken

Serves - 3 to 6 people, depending if you serve it with rice or
other food.
Total Time - 20 - 30 minutes.
Ingredients
Batter & Chicken
- 4 - 6 Whole boneless, skinless, chicken breasts
- 1/2 cup Cornstarch
- 1/2 teaspoon Salt
- 1/8 teaspoon Pepper
- 1/4 cup Water
- 4 Egg yolks, slightly beaten
- 4 Green onions, sliced (optional)
- A few cups of oil to fry the meat
Lemon Sauce
- 1 1/2 cups Water
- 1/2 cup Lemon juice
- Just use the "Real Lemon - Lemon Juice" that comes in
the green bottle in the store.
- 3 1/2 tablespoons Packed light brown sugar
- 3 tablespoons Cornstarch
- 3 tablespoons Honey
- 2 tablespoons Instant chicken bouillon Granules
- This is equivalent to two of those yellow square chicken
boullion cubes. Just throw them in the microwave with a bit
of water for a few minutes to get them to dissolve.
- 1 teaspoon Grated pared fresh ginger Root (optional)
Preparation
FOR CHICKEN:
- Remove skin from chicken and discard. Cut breasts in half. Remove
and discard bones. Pound chicken breasts lightly with mallet or
rolling pin.
- Save your self the time of taking out the skin and bones.
Just buy skinless & boneless chicken.
- Combine cornstarch, salt and pepper in small bowl. Gradually blend
in water and egg yolks.
- Pour oil into wok. Heat over high heat until oil reaches 375 degrees
F. Dip chicken breasts, one at a time, into cornstarch-egg yolk
mixture. Fry breasts two to four at a time (depending on size of wok),
in hot oil until golden, about 5 minutes. Drain breasts on absorbent
paper. Keep warm while cooking remaining chicken.
- Cut each breast into three or four pieces and arrange on serving
plate. Sprinkle with onions.
FOR SAUCE:
- Combine all ingredients in medium saucepan. Stir until blended. Cook
over medium heat, stirring constantly, until sauce boils and thickens,
about 5 minutes. Pour over chicken.
My Comments
- The original recipe called for 4 chicken breasts, but there was
enough dipping mixture, and lemon sauce left over that you could
probably increase it to 6 or more. Also, there was so much lemon
sauce left over, that you could probably save it and use it 2
additional times.
